Classic Rum Cask & Caol Ila Cask Aged Old Raj Gin Release
Cask Aged Gin is not a new thing – just ask the Geneva guys! – and it is something we have been working on for quite some time now, with two small releases at the last two Open Days. We wanted to make sure we got things right before releasing anything on a larger scale and now we are happy we have reached that stage.
These two new releases represent our first foray into full size cask matured gins. Both of these gins have been rested in the secondary casks for 299 days and, as with all of our products, were bottled when we felt they were ready.
We filled the casks with Old Raj gin at a standard whisky filling strength of 63.5% abv and then, prior to bottling, as with our core Old Raj gins, we added saffron.
The classic rum cask gin adds a sweetness to the Old Raj and a creamier mouth feel, where as the Caol Ila Cask gin adds a hint of vanilla along with a subtle smokiness, without being overpowering, as we were looking for balance here and not just a whack of smoke.
We would recommend drinking these gins… any way you like! However, we would suggest that these make for great sipping gins on their own in a nosing glass. When drinking them long we prefer Ginger Ale over Tonic, or why not use them to put a twist on your favourite cocktails, such as the ones below:
Classic Rum Cask Finished Old Raj 55%
Martinez
60ml Old Raj Rum Cask Finished Gin
30ml Sweet Vermouth
15ml Dry Vermouth
5ml Maraschino Liqueur
Dash Angostura Bitters
Stir all ingredients over ice in a mixing glass and strain into a chilled cocktail glass – garnish with either an orange zest twist or a maraschino cherry
The Harlem
60ml Old Raj Rum Cask Finished Gin
5ml Maraschino Liqueur
60ml Pineapple Juice
Shake all ingredients over ice and fine strain into a chilled cocktail glass – garnish with a maraschino cherry
Caol Ila Cask Finished Old Raj 55%
Dirty Martini
60ml Old Raj Caol Ila Cask Gin
15ml Dry Vermouth
Barspoon of Olive Brine
3 drops Orange Bitters
Stir all ingredients over ice in a mixing glass and strain into a chilled cocktail glass – garnish with either 1 or three olives
Negroni
35ml Old Raj Caol Ila Cask Gin
35ml Sweet Vermouth
35ml Campari
Build all ingredients in an ice filled glass and stir – garnish with an orange zest twist.
